Bethan - In charge
Years of service: 25
Won't leave home without: My team because without them I can’t do my job. And my hydrating lip balm
Career highlight: The Ryder Cup Team dinner, hosted in Cardiff Castle in 2011. As a Welsh girl I was incredibly proud of the amazing Welsh food on display
All time favourite dish: Lobster thermidor
Best venue: Somewhere we haven’t worked before so we can create a memorable event for our client
You heard it here first: as a farmer’s daughter I love going home to our family farm, putting on my wellies and getting my hands dirty

Lucy - Queen of Logistics
Years of service: 18
Won't leave home without: Pencil with a rubber on the end – it’s the only way to keep up with changes
Career highlight: It has to be my first BRIT awards – it’s such a privilege that we are still their caterer of choice 12 years later
All time favourite dish: My husband’s seafood risotto
Best venue: Our wedding marquee at my family home in the Cotswolds
You heard it here first: I had the pleasure of working on the QE2 for two years

Rebecca - RETURNING TO THE TEAM
Years of service: First time round was 4 years back in 2005 but I kept my hand in, working with Bethan and the team for every BRIT Awards since then, and now here I am, back again!
Won't leave home without: My phone; as we are out and about so much it’s essential to stay in touch, plus it’s a great source of information.
Career highlight: So many “best bits” over the years, but a more recent highlight must be re-joining the Payne & Gunter team after 10 years away
All time favourite dish: I don’t really have a favourite dish, it really depends on where I am, who I’m with and what the occasion is. (Although if there is chocolate involved, I’m sold!)
Best venue: From my previous incarnation with P&G it was the White Tower at the Tower of London, beautiful, very historic and operationally very challenging.
Second time round, I’m yet to visit many of the new sites we operate at. I’ll get back to you on that one…..
You heard it here first:My degree in Geographical Science means I’m great at reading maps and very rarely get lost (although don’t test me on it!)

Years of service: 2
Won't leave home without: My motorcycle - it makes it easy to pop back to my herb garden for fresh ingredients!
Career highlight: Joining the Payne and Gunter team
All time favourite dish: Lobster tortelli with lobster bisque
Best venue: Trinity House - a perfect London view from the windows over the Tower of London
You heard it here first: I grew up playing 'Hide and Seek' around Rome's famous Colosseum

Felicity - Brings in new business
Years of service: 5
Won't leave home without: My iPad. A must for showcasing all the delicious food we serve
Career highlight: Working in some of the most discerning venues in the UK. They’re all so fascinating and diverse with different stories to tell.
All time favourite dish: Roasted rainbow beetroot and carboncino goats cheese salad, truffled roasted potatoes
Best venue: Queen’s House. An absolute gem of a venue with beyond stunning architecture in a seemingly intimate setting.
You heard it here first: I lived in Italy and Spain for a year as part of my degree.

Dave - behind the scenes
Years of service: 17
Won't leave home without: My Leatherman penknife and a sharpie marker pen (which Bethan usually pinches)
Career Highlight: I will never forget the Beckham’s World Cup Party in 2000 that they held in their home
All time favourite dish: Duck spring rolls
Best venue: Hedsor House, Taplow
You heard it here first: In August 2017 I cycled from Land's End to John O'Groats to raise money for charity - almost 1000 miles in under 2 weeks!
